Mother's Day Waffles and Pancakes

What could be better for a Mother's Day brunch or breakfast than waffles and pancakes? However, the tradition of slathering waffles and pancakes with empty calorie, sugar and fat filled syrups, butter and creams has to be one of the most unnecessary and unhealthy of eating habits.

Waffles and pancakes made with nutritious, wholesome ingredients are extremely delicious plain, with nothing on them. Using whole ingredients, waffles and pancakes have an interesting and delectable mixture of flavors and textures. If you would like to enhance, not mask, the flavor of your waffles and pancakes with a topping, try using fresh fruit or plain or Flavored Yogurt. Store bought flavored yogurts always have extraordinarily high quantities of sugar so make your own. It takes only a few seconds.

All of the following pancakes and waffles freeze very well, so don't hesitate to double the recipes. It is really a pleasure to grab home-baked waffles or pancakes out of the freezer instead of store bought fare.

Cinnamon Raisin Waffles are crispy on the outside and fluffy on the inside. They are sweetened with applesauce and raisins and have lots of cinnamon. This recipe can be used with any waffle iron.

Flavorful and fluffy Whole Wheat Pancakes are a whole grain version of classic pancakes. Blue Blueberry Pancakes get their periwinkle color because instead of draining and discarding the juice, it is incorporated into the batter along with three times the amount of blueberries found in typical recipes. Coconut Pancakes, have so much coconut in them, that about 25% of the batter is made from shredded coconut. Crunchy Multigrain Pancakes are vanilla flavored whole wheat pancakes filled with sunflower seeds and delicious, crunchy Ezikiel 4:9 cereal.
