Mother's Day Quick and Easy Breakfasts

Here are a few Mother's Day breakfast or brunch ideas to delight Mom. Just make sure to clean up the kitchen for her too.

French Toast is typically swimming in butter, loaded with sugar and made with white bread and cream. Converting an old family recipe, I have created a nutritious version of this breakfast favorite while enhancing the flavor. This French Toast is sweetened with applesauce and plenty of vanilla and crisped to a perfect golden brown. How do I know that the French Toast will be a perfect golden brown? I know because the recipe calls for baking, not frying, saving you lots of time and ensuring perfectly even cooking. Carob French Toast, a variation of the original favorite, is also applesauce sweetened and baked, making it a very simple recipe.

Does Mom like it hot? Here are two spicy recipes which can be prepared to hair-raising hotness, mild enough for children or anywhere in between. Many, many years ago I was very surprised when a friend of mine of Yemenite heritage made very spicy french toast for me. He was surprised when I told him that Americans eat the same dish, only sweet Yemenite French Toast is that same recipe that I learned so long ago. Serve it with chopped vegetables such as cucumbers, carrots or bell peppers. Do you find it strange to eat fresh veggies for breakfast? It is a regular practice in many countries and a very healthy way to start the day. To be really authentic, I am including a recipe for Zhug, an incredibly hot and garlicky, Yemenite relish. It has a beguiling fresh pepper smell and the taste is truly addictive. As an added bonus, all of the fresh, raw garlic will help boost your immune system. Zhug takes only 5 minutes to make and if you like hot sauce, you will use it all of the time.

The second spicy recipe is Shakshouka, a spicy, tomato, egg dish with plenty of Middle Eastern spice. To save time, I make this dish with already prepared salsa and get delicious results. Serve with chopped fresh vegetables and whole grain toast.

Apple couscous and Pineapple couscous are both super simple recipes. In both recipes, fruit juice sweetened couscous is smothered in cinnamon laced, baked or fresh fruit.
