Quick and Easy Meal Ideas
This month, just about all of the recipes are "Quick and Easy", with a prep time of under 15 minutes, so make sure to read the other articles. Even though prep times are short, bake times may be longer, so make plans in advance.
Boston Brown Bread is a whole wheat bread with lots of cinnamon and raisins. I recommend kneading and rising in the bread machine and baking in the oven, making it a quick recipe. You can serve it with Nefchatel cream cheese, cottage cheese or nut butters and a soup or salad and your meal is set.
Stuffed Portobello Mushrooms have a middle eastern flavor. Lentils and buckwheat, seasoned with cumin and mixed with pine nuts, are used to generously top Portobellos.
Colorful, Simple Dinner is not at all simple in flavor, just in prep time. On one plate you have: Jerusalem artichokes and peas, dusted with thyme and roasted to perfection; Sweet kabocha squash, baked and topped with crunchy pecans; Chewy, delicious barley; Baked tofu adding a salty, interesting flavor. Not only is this dinner delicious, it is very attractive. Green and grey from the Jerusalem artichokes and peas, gold from the kabocha, dark brown from the tofu and barley adds ivory. This is a good dinner for the auto oven as both the kabocha and the Jerusalem artichokes have longer bake times.
