Quick and Easy Entrées

Polenta, otherwise known as cornmeal, is very fast to make, can be molded into any shape and has a mild taste with a smooth, almost creamy texture. Polenta complements many different flavors and textures I really hope that if you have never tried it, you will take the plunge. All three of these recipes are vegan and appropriate for those with allergies to eggs, wheat or dairy.

Polenta Paprikash is for those who love Hungrian food and paprika. For those of you not familiar with paprika, it has a mild, little bit nutty, little bit bitter flavor. It is made from very, very mild chili peppers ground and dried. In Polenta Paprikash, a vegan, very creamy paprika sauce covers mixed vegetables and is served over the polenta.

Polenta Pizza is just what the name implies. Instead of using conventional, whole grain, pizza crust, polenta is molded and serves as the crust. You can top this pizza with you favorite toppings.

Roasted Vegetable Polenta is another great recipe that lends itself well to the automatic oven. Green beans, carrots and onions are roasted so that their natural sugars caramelize. Then they are served over a bed of polenta. Optionally, you can crumble your favorite goat cheese over the top.
