Chocolate Confections

Chocolate truffles Think how much more you will be loved if you are able to give a confection that will not clog arteries or give sugar highs and headaches. I compared my fudge recipe to a typical fudge recipe and calculated that it has one tenth the sugars, half the total fat and half the saturated fats. A final note, please pay attention to the type of tofu used in each recipe. If the recipe calls for firm tofu and you use super firm or silken, for example, you will end up with a less than desirable texture.

The Chocolate Fudge, like all of my chocolate recipes, is very bitter sweet so that you can enjoy the full, robust flavor of the chocolate. It has the same texture as fudge and is absolutely delicious. Another great thing about this fudge is that it can be prepared in about 15 minutes.

The Chocolate Truffles are also bitter sweet. They are creamy smooth and melt in your mouth just like real truffles. Another quick recipe, they can be prepared in about 15 minutes.

chocolate mousse

Vegan Chocolate Mousse is delightfully light and creamy with tiny crunches of chocolate throughout. It also has very little sugar and takes only about 10 minutes to prepare. Since it is vegan, it is a great desert for those with egg or dairy allergies.

Carob Brownies are delicious with lots of roasted carob flavor. These brownies have a rich, chewy texture and a semi-sweet taste.
