Cakes and Frostings

Delicious cakes are always a welcome treat. How great to serve delectable, wholesome cakes packed with many vitamins, minerals and other nutritional necessities.

Baking the Cake

If you need to prepare for a party ahead of time, you can mix the dry ingredients for these cakes several days in advance. You can mix the wet ingredients one day in advance. (For safety, it is very important that eggs be baked within 24 hours of being cracked open! The Food Safety and Inspection Service of the USDA recommends use within 2 days, but I like to be safe.)

The Strawberry Cake has chunks of strawberry in it and a moist, light texture. It is, perhaps, the simplest and quickest cake you can make! You can frost it with the Strawberry Cream, Vanilla Cream Cheese or The Vanilla Cream Frostings. If stenciling, cocoa or carob powder would taste great.

The Carrot Cake is generously spiced with cinnamon, nutmeg and allspice and lightly sweetened with raisins, honey and molasses. Pair this with the Cream Cheese or Vanilla Cream Frostings. If stenciling, cinnamon or nuts would taste great or draw a picture using nuts and or raisins.

The Blueberry Banana Cake incorporates lots of bananas and blueberries enhanced by maple syrup. It also has just a hint of cinnamon and nutmeg. It pairs well with Blueberry Cream<, Vanilla Cream Cheese or Cream Cheese Frostings. If stenciling, cocoa or carob powder would taste great on this cake too.

The Carob Cake, is sweet and dark and often reminds people of chocolate. It can be paired with Carob Fudge Frosting, Cream Cheese, Vanilla Cream Frosting or any of the fruit frostings. If stenciling, cinnamon, coconut, nuts or carob powder would taste great.

Frosting

You can make frostings of almost every color using all natural ingredients. All of these colored frostings will go well with any cake. Since so little of the coloring ingredients are used, they do not affect the flavor.

Using the Cream Cheese Frosting and natural colorings, you can create frostings of almost every color in the rainbow. All of the colors of Cream Cheese Frosting are great for both use in a pastry bag with various tips or for frosting the entire cake. When using a pastry bag, the frostings should be very cold. For frosting the entire cake, the frosting should be just a slightly colder than room temperature. To ensure freshness and that the decorations will stay beautiful, keep the cake in the refrigerator after decorating.

The Strawberry Cream Frosting is pink and Blueberry Cream Frosting is periwinkle. Both are great for frosting the cake. However, they do not have the right texture for use in a pastry bag. They should be used as a colorful background on which to draw with the other cream cheese frostings. You can also use them to draw freehand with a spoon and a knife.

If you want dark red or dark purple, you can make the Fruit Filling with strawberries or blueberries. Like the Strawberry and Blueberry Cream Frostings,you cannot use these in a pasty bag. I have successfully drawn, freehand with these colors using a spoon and a knife.

Carob Fudge Frosting is hard like fudge and glossy black. It is used for frosting the entire cake but not for decorating. It makes a very nice background for stenciling with coconut or decorating with the Cream Cheese Frosting.

Vanilla Cream Frosting and Cream Cheese Frostings are creamy white. They have lots of vanilla and are great for frosting a cake. The difference between them is that Vanilla Cream uses tofu in place of some of the Neufchatal cream cheese. Using tofu helps reduce the amount of saturated fats, increases the protein and adds the other healthy benefits of soy.
