Thai Night
Almost everyone who tries Thai food instantly loves it. The only problem is that restaurants use so much oil and refined sugar that you feel awful after you finish eating. Also, no matter how much a server might promise you that you are getting a vegetarian dish, it will always include fish sauce and shrimp paste.
Since Thai food has been one of my favorites for many years, I just had to develop the recipes in a healthy, vegetarian fashion. Additionally, I am using common ingredients so you do not have to hunt for an Asian market to prepare these dishes.
I am so crazy about Thai Peanut Sauce that sometimes I make a meal of it with romaine lettuce. You can also serve it over rice, noodles or vegetables. This versatile and delicious sauce is easy to make and great to have on hand in the fridge.
Coconut curries are from the warm, southern islands of Thailand where coconut palms grow wild. So as you enjoy these delicious curries, think of warm, crystal clear water meeting a white sandy beach, shaded with coconut palms. There are many different types of Thai curries and Massaman is the mildest with a strong Indian influence.
Coconut Massaman Vegetables is a delightful mix of many different, lightly cooked vegetables in coconut milk and curry. The coconut milk makes the dish sweet, the vegetables are still slightly crunchy and the spices add the wonderful curry flavor. Coconut Massaman Tofu mixes tofu with crunchy sweet potatoes in the same sweet coconut, curry sauce. Serve these over brown rice.
Thai Garlic Tofu and Peppers is just as the name implies. An incredibly delicious blend of green bell peppers and tofu in a very garlicky Thai sauce.
Pad Kee Moa is a noodle dish with tons of vegetables and either tofu or seitan flavored with mint and garlic. The mint is subtle and all of the many flavors blend deliciously.
Pad Thai is probably one of the best loved of all Thai dishes. Noodles are mixed with eggs, tofu, crunchy bean sprouts and peanuts in a sweet, tangy sauce. Vegans can omit the eggs and still have delicious results.
There is enough here to make a real Thai feast! Or you could make just one of the dishes and have a simply delicious Thai meal. Either way, bon appetite!
