Warming Soups and Stews
Winter is time for warm, soothing soups and stews. I am bringing you a collection of unusual, incredibly delicious soups and stews to enjoy. They require easy, one pot, preparation and keep beautifully for about a week in the refrigerator.
Hearty Dilled Vegetable Stew with Dumplings is slightly sweet due to carrots and winter squash while the distinctive flavor of dill enhances the plethora of fresh veggies. The flavorful and filling dumplings round out the meal. This stew is a meal in itself and there will be no need to serve anything else with it.
The Vegetarian Cholent is a variation of a Jewish favorite. It is a combination of beans, grains, potatoes and vegetables baked for several hours on a low heat. The Curried Split Peas are served over rice to make a satisfying entree. Lots of ginger and spices give the yellow split peas a classic Indian flavor, while fennel and garam masala create a slightly sweet curry. This curry is easy and delicious.
