Quick and Easy Entrées

With all of the holiday cooking at hand, most of us are too weary to bother cooking our daily meals. This month, I am spotlighting quick and easy recipes that are gourmet enough to wow your guests. Not only do the Colorful Curried Couscous and the Portobello Quinoa require less than 15 minutes prep. time, but they are also on the table, start to finish, in less than 30 minutes. The Roasted Vegetable Pasta with Almonds is great because you can really quickly throw the vegetables into the auto oven before you leave the house for the day. When you come home, you will have a delicious, gourmet meal waiting for you.

The Portobello Quinoa is so easy that you will not believe how elegant it is. Quinoa is a small, nutty grain available at all health food stores. It is high in protein and minerals. Portobellos are the king of mushrooms. They impart a very strong mushroom flavor and are high in protein, vitamins and minerals.

Colorful Curried Couscous has everything you need to make a meal. Carrots, beans and whole wheat couscous are spiced up with curry and the sweet flavor of fennel.

Roasting the vegetables for Roasted Vegetable Pasta with Almonds takes a long time since we are caramelizing the onions and the red peppers. However, it takes less than 10 minutes to throw them into the oven. The vegetables do not need refrigeration and are very forgiving if left in the oven too long. That's why this dish lends itself so perfectly to the auto oven.
