Quick and Easy Entrées

Aura's Quick and Easy recipes all require 15 minutes or less preparation time. They may require more cooking time, but you will be free to do other things during that time.

I really recommend that when you are at home for a few hours, you prepare some staples to have on hand. It will take you no time to get brown rice in the pot or the potatoes in the oven. You can then go do what you like at home while they are cooking. Brown rice is very helpful to have in the refrigerator or freezer. Rice freezes nicely as long as you heat it well after thawing. Frozen rice will not be good, however, for rice salads. Baked potatoes are also a great thing to have on hand in the refrigerator. They will not freeze well though, so only make as many as you can eat in a week. Also, in the fall and winter you can use baked yams and sweet potatoes in many recipes. Baked yams and sweet potatoes will keep for a week in the refrigerator, but do not freeze well.

Potatoes, yams and rice are great additions to all of your quick meals. You can, of course, easily microwave the potatoes. I will not get into the controversy over the nutritional values of microwaved food here. I will say though, if you have the forethought, it is better to bake the potatoes/sweet potatoes/yams. However,when in a pinch, I use a microwave. My cooking, even if microwaved, is still going to be healthier and taste better than anything store/restaurant bought.

BBQ Tofu is easy to make. BBQ tofu burritos and BBQ tofu tacos are two great, quick recipes that use it.

Tofu, miso soup is a comforting, warming and filling meal for a cold night. It is also a very soothing soup for those with a cold or flu.

Sweet potato, millet and tofu with sesame ginger sauce is a little bit sweet, gingery and very satisfying. Millet is a yellow, very quick cooking, mild tasting grain that can be found in any health food store.
