Happy Hanukkah

Hanukkah is such a happy holiday. Judah and his followers were heros, we rededicated the temple and we had quite a miracle. We play with dreidels, light the menorah and sing songs but, OY VEH!! All that oily, fried food can really make you sick. Not only that, it is very time consuming to fry all of those Latkes and what a mess the splattering oil makes of the kitchen.

I have created Baked Latkes. They will save you a lot of time, not make a mess of the kitchen and they are just as crispy and enjoyable as fried. Also, they are infinitely more healthy than fried since you will not be eating an abundance of overheated oils. There is, however, enough oil to still remember the big miracle and taste like heaven. These latkes are so easy and so delicious, that you will serve them all year round.

If you serve latkes with apple sauce, it is simple to make your own. Just scrub and core your favorite eating apples. Do not peel. Steam the apples, until they are soft, in as little water as possible. Whirl in the food processor until pureed.

Soofganiot are typical Israeli Hanukkah food. They are simply fried jelly doughnuts with nothing nutritionally redeeming about them whatsoever. However, now you can have Aura's Soofganiot which are healthy enough to eat as a meal. I bake my soofganiot and add very little sweetener. They are whole wheat and filled with real fruit. These soofganiot are much more flavorful than typical jelly doughnuts.

One important thing to note: Since these latkes and soofganiot are not heavy, fatty and sugary, people will be eating much more of them. Make sure that you make enough.

Finally, if you still want more oil to celebrate the holiday, do what I do... Eat an enormous green salad, slathered in two parts olive oil and one part vinegar, (balsamic if you can find it.)
